Protein Almond Joy Cookies (vegan, gf)


We're having a cold and rainy Spring so far in Boulder. When Mother Nature doesn't cooperate with outdoor fun, experimenting in the kitchen can be tasty and rewarding. These vegan and gluten free Protein Almond Joy Cookies have a nice protein boost with Arbonne's new "Daily Protein Boost" -- (zero sugar, 10 grams of tasteless, vegan protein per serving, that can be added to pretty much everything). Almond meal flour, coconut oil and unsweetened, shredded coconut give these moist and hearty cookies amazing flavor and texture.

5 cups almond flour (sometimes called almond meal)

3 scoops Arbonne Daily Protein Boost

11/4 tsp salt

1 tsp baking soda

1/2 tsp xanthan gum

1 cup agave nectar

3/4 cup coconut oil (liquified)

1/2 cup unsweetened shredded coconut

2 Tbsp vanilla extract

8 oz. vegan chocolate chips

1. Preheat oven to 425 deg

2. Whisk together almond flour through xanthan gum in a large bowl

3. Whisk together agave through vanilla in a separate bowl.

4. Stir agave mixture into almond flour mixture

5. Scoop dough with an ice cream scoop onto parchment lined cookie sheets and flatten dough with the bottom of a drinking glass.

6 Bake cookies for about 12 mins. or until golden brown

7. Cool 10 mins on baking sheet and transfer onto a wire rack until cooled and settled.

Makes 12 large cookies
